Julio Velasquez comes to Aperitif as the former Master Chef of Sage Bistro in Bellmore, Long Island. As the Chef since its inception in early 2010, Julio applied his creative, yet balanced approach to flavor and cooking to make Sage Bistro one of Zagat's top rated Bistros on Long Island. He is excited to now bring his hard work ethic and passion for cooking to Aperitif Bistro & Wine Bar in Rockville Centre, NY.

Mr. Velasquez is a native of Poloros, El Salvador. After coming to the United States in 1991, he trained with such renowned chefs as Michael Maroni of Maroni Cuisine in Northport and Matthew Hisiger of Panama Hatties in Huntington. Other venues of experience include Calamari Kitchen (Now Fiddleheads) of Oyster Bay, and Cool House of Blue in Manhattan. Most recently, before Sage Bistro, Julio was the Master Chef at Bistro Cassis in Huntington Village and Enoteca in Locust Valley.

 

Onur Peter Oktas started his career at the Kempinski Hotel in Istanbul, Turkey, where he was the restaurant head manager for seven years. Peter then traveled to the United States to work as an assistant food and beverage manager in the world famous Times Square Marriott Hotel. The next stop on his journey was Bistro Cassis in Huntington, NY, where he met Chef Julio Velasquez. While there, Julio and Peter established the working relationship which built the foundation for their partnership today.

In addition to being on the staff at Bistro Cassis, Mr. Oktas was chosen to help manage Bistro Citron in Roslyn, NY, and Bistro St. Germain in Mineola, NY. During his stay in the United States, Peter has also earned an associates degree in Business Management from State University Of New York College At Old Westbury. Most recently Peter served as the head manager in Huntington's well established Mac's Steak House. He is now honored to bring his knowledge and experience to Aperitif Bistro & Wine Bar and sister restaurants Sage Bistro in Bellmore, Sage Bistro Modern in Woodbury, and Persil Restaurant in Oceanside

Paris K Interior Design was founded in 2001 by Paris Kostopoulos on the principle of offering exceptional value in interior design services for business and private interests. Based in New York, NY, the firm has focused on hospitality and residential projects throughout the United States, as well as in Greece. From Manhattan Projects, large and small, to signature Restaurants and Luxury Residences; to country homes and galleries, Paris Kostopoulos manages to mold his personal creative aesthetic to his clientele’s functional and visual needs.

The firm's founder has more than 25 years of experience in interior design and project management. His professional beliefs have remained steadfast since the beginning of his carrier: to remain true to himself and his clients, to produce inspirational and life-changing design along with unparalleled quality of work and customer service at a competitive price. Many of Paris Kostopoulos’ clients are themselves accomplished entrepreneurs and style setters with a critical eye to perfection and require the special attention that he provides. In the Spring of 2009 Onur Oktas and Julio Velasquez approached Paris Kostopoulos to help them with the design of their 3rd and and 4th restaurants. Firsdt Sage Bistro Moderne in Woodbury successfully opened in October of 2009 followed by Aperitif in Rockville center; opened its doors summer of 2010. The relationship between the team grew and soon the original owners invited Paris Kostopoulos to be a partner in the Rockville center location. The team has future plans to expand to Manhattan and beyond setting a standard for n ew Bistros.

Tina Psoinos is an acclaimed fine art photographer whose artwork, in private collections around the world, has received international recognition.

Born and raised in Athens, Greece and now lives in New York. Tina Psoinos received a Bachelor in Fine Arts and continued her studies towards a Masters in Photography at Hunter College, NY, under the Master Photographer Roy DeCarava – National Medal of Arts 2006 – and other notable artists of our time.

Aperitif Bistro Wine Bar and Paris K Interior Design commissioned Tina Psoinos for her black and white images of Parisian landscapes. On display in the restaurant are an image of Tour Eiffel and another of Pont Alexandre III depicting one of the two Nymphes de la Néva. Tour Effel is taken with a widelux camera for a dramatic panoramic effect while Pont Alexandre III is taken with a digital camera and further distorted in Photoshop to achieve the effect of an unleveled widelux panoramic shot.

Tina Psoinos often abstracts her images to engage the viewer in examining the explicit and implicit in recognizable objects and altered reality. Her work flirts with negative space and cross processing to present her own perception of the obvious.
